We are now in third week of Ramadan. All foods and water are being served after the sunset and before the sunrise. I am the chef cook of course! and all around.
Presenting my recipe last night. It is called Maqash in Arabic, made up of goat or lamb meat with some ingredients using a native pot.
For 1 big pot
- lady finger
- tomato paste
- cumin powder
- coriander powder
- black pepper powder
- salt to taste
Remember: NO OIL
- Bay leaves
- cinnamon stick
- Preheat the oven with 130°C
- Clean the meat and remove extra fats.
- wash and clean the potatoes, tomatoes and lady finger.
- Slice the onion, garlic, potaoes and lady finger.
- Clean the pot.
Note: Pot was made up of hard old rock and this is so heavy.
We have to put the tomatoes in the bottom of the pot.
Add on the meat.
Add on the onions and garlic.
Add on the sliced pototoes.
Add on the lady fingers(it was already half cooked for preservation tonavoid rotten in fridge.)
Add on the spices.
Add on water up to the top.
Adding salt and cubes to taste.
After adding enough water, it must be sealed with aluminum foil. Keep it tightly.
Put it down inside the pre-heated oven and cooked for 3 to 4 hours.
After the long waits, it would be ready to serve. We cam check.it occasionally. It depend upon the pot has no crack .
The finale and ready to serve to my beloved boss and family.
Tip: I am not cooking our food without scaft on my head. It must be completely covered to avoid falling the hair to the food I am cooking.
Look at my face, I was already tired and sleepy but this is a kind of work that I have . No regrets and I am so very grateful for being what I am .
